All of the calibers are plentiful if you hate money. .22LR is still the cheapest to shoot but the cheapest I've seen now is 14cpr which is more than double what it used to run.
7.62x39 is your best bang for buck at ~40cpr for Wolf steel, but the price keeps going up (was ~17cpr a year or so ago).
Why would it matter if the government hates a particular caliber of ammo?
Why are you wanting to buy a gun? Self defense? Hunting? Sport?
If you are serious about buying a gun, maybe you can find someone that will take you out shooting with them at a local range or gun club.
Right now all ammo is facing shortages. This is mostly traced back to common components (ie primers) where there are only a limited number of manufacturers.
Ya... you are prob not going to be hunting deer with 556, you would want something larger. 556 is good for anything that is about the size of a dog. But if you are hunting when SHTF, 22 would be good as you can waste more of it, and 556 for everything else, and be pretty common to get or trade for.

Ok, well almost all AR-15's are chambered in either Remington .223 or NATO 5.56. If you go with a Remington chambered model, DO NOT try to shoot 5.56. If you go with the 5.56, SOME models can also shoot the .223 but again make sure you know this before you decide. Personally I'd go with Remington .223 because the amount of .223 ammo out there is just insane. It's pricey (all ammo is), but you can find that shit at your local Walmart because so many guns use that same type of ammo.

Lots of good info here so far. But since you're late to the game and we're in a massive shortage so I would go with what you can get your hands on the easiest at your local place. Guns are fairly easy in terms of learning its parts quickly, but in case you get put into a rock and a hard place you have someone to fall back on.
After this blows over then id go with what you want..... Just a suggestion.

You can get an upper or BCG that will take 22cal for the AR.
So really you can run two different types of ammo in it. This is good because you can shoot small game with 22 and larger game with 556

Factually inaccurate. A 5.56 spec barrel can shoot any .223 REM ammo.

Mostly correct. Barrels chambered in .223 shouldn't shoot 5.56 ever, but any barrel chambered in 5.56 can shoot both:
