Once Trump has left office, he becomes a private citizen and cannot be impeached. If they are going to do it, they have to do it while he still holds the office.

Nope. Only an "incumbent" President can be impeached. If Biden is inaugurated on the 20th, Biden is the incumbent. Now we can impeach HIM.
That's my understanding. Or, I should say, it came from Dershowitz. Apparently, an impeachment, is impeachment from office. If the person no longer holds the office, there is nothing to impeach him from.
