I was looking at the browsers and I was wondering which ones I should pick and why. My understanding is that Dissenter is basically Brave but slightly modified, though I'm not sure how. What are the differences, and why should I get one over the other?

What's BAT?
Brave blocks ads. Blocking ads blocks websites revenue stream. If you opt in you can get ads targeted to you based on encrypted and anonymous user data and you get a Crypto currency (BAT) as compensation for viewing ads. You can further opt in to tip websites you visit based on how frequently you visit them with the BAT you have earned. It fixes the big corporation owns your browsing data and personal info by putting it into an anonymous virtual and autonomous machine.

Is there any performance and/or quality difference between Dissenter & Brave?
I have not used DIssenter. Based on the website I appears Brave is more secure and privacy based. Brave is nice because its a turnkey private and secure browser. Other browser can be made to be as secure or more but you need to know what you are doing and why. Brave just works and I like the BAT model. As far as performance I have no issues on Win10 desktop and very little on Android.
