Jews obviously have some strong influence around the world. I'm not arguing about that. But to stay ALL Jews are secretly controlling the world behind the shadows is where critical thinking goes out the window.
I know but let's not pretend a large percentage of people who are into those conspiracies don't think all Jews are evil and secretly coordinating with each other. I've read a lot of stuff on /pol/ and others and most of the shit on there about Jews had Qanon levels of evidence. My point is why waste your time trying to prove Jews are secretly controlling the world when China is doing the same shit out in the open.
But to answer your questions about "why" - because we are free to criticize China, Chinese people, Chinese spying. But we lose our freedom of speech, or our jobs, if we attempt to criticize anything about Jewish people.
Even pointing out simple facts about the origins of "white privilege" vocabulary, or the organizations financially supporting anti-fa, or the story of how Jonathan Pollard was just flown to freedom on a Billionaire's private jet.
That stuff doesn't happen with the Chinese, and when it gets close you're allowed to criticize it.
There's only one litmus test for freedom of speech.
