Hand counting, machines can be hacked, counting done by hand by people of all parties being present as poll workers and watchers is more reliable.
Military in the poll booths too, to make sure the workers and watchers of both parties are allowed to do their job.
From what I've seen, Taiwan's Election Process is super transparent, Should be done like that everywhere
