Nothing is secure. There are backdoors engineered into every chipset that are completely undetectable by the software running on them. Even if your device is powered off, the folks on the other side can access your cameras and microphone. Every keystroke you make can be traced.

Now, that doesn't mean you are always being actively watched but don't assume that you are not....

Get a burner phone if you can. Trust no big tech.
