When it comes to beef, yes. With chickens and pigs though, it's all female. Male chickens and pigs don't taste good and are culled right after they're hatched or born.
Male pigs are CASTRATED. They are not wasted. They also taste VERY good. If male chickens are butchered before they are 4 months old, they also taste very good and are not wasted.
Maybe not all producers cull them, but the companies in my state that produce piglets do cull the males.
That is wasted $$$ and meat. It doesn't make sense to cull them as castration is extremely simple on a 4 day old piglet and not cost prohibitive. I raised hogs for a few years and castrated the males myself. I even left a couple intact and had them butchered at 6 months of age. The meat did not taste any different than the females or castrated ones.
Roast suckling piglets are a thing.
That's not true for the chickens.
The chicken they raise for commercially meat are specially bred so that are ready in 8 weeks. They don't care if they're males or females.
They also sell the extra roosters of the laying breeds to raise for meat.

The problem is keeping multiple roosters in a confined area. Roosters fighting over food and hens would prevent the flock from reaching weight on schedule. Tyson wants chickens ready to slaughter in six to seven weeks.
The type of chickens Tyson and any other big food company use are a special hybrid cross broiler bred specifically for meat only. They mature from hatchling to a 5 pound dressed out fryer in those 6 to 7 weeks. Those type of chickens (or any chicken breed) are not sexually mature at that age and therefore, the males are NOT killed at hatching. Both sexes are raised for meat. I know as I have raised these types of broiler chickens for meat and it is amazing how fast they grow.
It is the layer breeds that the males are most likely destroyed at hatching in the Corporate Farm industry.
edit: Those little fancy Cornish hens? They are actually the female broilers that are butchered at 4 weeks old. The breeds used to get the hybrid broiler chicken are the Dark Cornish and White Plymouth Rock chickens.
