No-one is stopping you from buying hardware and setting up your own servers. I am sure Bezos and co. could easily spy on any info hosted in AWS - like any cloud provider.

Even if you own all of your own hardware, it's useless if no DNS servers agree to point towards your servers.
Ok, so roll your own DNS. Done. Web registrar's still need to agree you actually own your domain. And registrar's don't actually have to agree to that.
