Funny enough long term energy storage for these sort of situations is one of the things based scientists are working on, but we're like a century away from it being realistically on the market. The closest we have right now is pumping water up a fucking mountain and letting it run back down as hydro.
OTOH, Texas uses 34% solar already since we use a fuckton of energy just keeping ourselves cool.
