I like Matrix and I also use the element client. It's the only comms I feel unwatched while using. Signal is probably safe too, but I know for certain Matrix is.
Much better UI than element, but that's because it's more like Whatsapp in that respect (except way more secure than Whatsapp). Telegram would be more what you're looking if you like element, although not as secure as Signal
Signal still has an administration like any other company, these guys happen to work for whisper which is the company that builds their technology. To me this is just a dodgy way of owning a company.
