Twitch subs are an interesting beast. At face value they're just a way to get some emotes to use anywhere on the site. For some big streamers, especially ones with tits, you usually get late-20s permavirgins using it in the way you mentioned, and in many cases it reads out your message so you get to have the streamer's actual attention for a second unlike the 10000 other monkeys smashing their keyboard into chat. But the even worse case is handing out subscriptions to others:
To the rest of the community, you're now some benevolent entity handing them free stuff, so if you simp hard enough more people might remember your name and "think you're cool" so you get people dropping thousands of dollars while in some cases going into debt themselves. But another shit part about it is how Twitch shows how many months you've been subscribed, as well as how much in a row. So now all those people who got a free sub, well they don't want to lose "their streak" right? Beter set up that monthly recurring subscription, because the algorithm that distributes the free subs won't pick you again for a while. Not to mention you probably got used to having those emotes for your epic funny jokes in chat that make you (feel) popular.
tl;dr Twitch is a carefully designed skinner box to squeeze money out of impressionable (mostly) millenials. Bezos is evil in more ways than just being a commie-funding demonrat.
The entire stream is basically ads, but the streamer is the one "advertising". THe ones where they just talk with chat and whatnot, it's to be expected. The ones where they are playing a game and seemed to be into it are ruined with this intrusive crap.
"Oh shit...need to sneak up on this guy and..."
*full screen popup of new subscriber and music loudly plays *
"Wow, thanks for subscribing Simp345!"
"..anyway I need to be careful and..."
*Half screen popup with annoying chime that says Simp128 has donated $5 with message 'Wow you're so sexy!'*
