I’m a Verizon wireless customer and have an iPhone 11 which is supposed to not be 5G capable. All of a sudden without my concent I’m seeing the 5G symbol at the top of my phone screen. I’m absolutely terrified. What should I do?

Doesn't matter if your phone gets 5G or not. It's not something that goes straight from the tower to the phone, it goes everywhere.
Mostly true, but 5g technology does include beamforming where multiple towers recognize the phone and project signals specifically at that location.
