Each instance is hosted by a different organization in a different location meaning your also insulate yourself from some of the surveillance techniques of your service provider.

Also consider installing uBlock Origin, DecentralEyes, Privacy Badger, ClearURLs, SponsorBlock, HTTPS Anywhere, Archive Page, Bypass Paywalls Clean, Universal Bypass. Not all of those are straight-forward to install, but bare minimum try all but the last two as those are the biggest pain in the ass.
