As much as I despise antisemitism, there are ethnic Jews and Jews through religion. I wouldn't say this if the Jewish community didn't openly argue this point.
We say it for the same reason. It's more specific. The Armenian Genocide is a specific occurrence of Genocide. So is the Holocaust. I would use the more specific term for anti- Hispanic racism when appropriate. But I don't know what that word is.

I know a few Jews that if you told them that they were not ethnically Jewish they would get mad. Jews are unique in the sense that they are an ethno-religion. Someone can be ethnically Jewish, for example a German Ashkenazi Jew but doesn't practice any religion. It is very, very, very, very rare that a gentile will convert to Judaism and practice that religion.
