You can use an inverter, sure. If you need 120VAC. Just remember the current limitations of the alternator. You can run a mini fridge but not bigger. Whatever you could run off the automobile is what you can run off the alternator, provided you spin it up. I run a cabin off one. I hooked it up to a waterwheel I welded up and it provides lighting, runs a 12 V tv, charges my usb devices, etc. You can run multiple alternators to increase the amount of current for higher loads. You can also use buck-boost converters to raise or lower the voltage required. All the information for basic electronics can be found online for free.
