If I'm not wrong, a gradient field is basically multiple vectors stemming from a set point. When all of the vectors are plotted on a chart it creates a "field".

If you checked the link, you'll see that it looks like a mask. He's just trying to sound smart saying "changes in the bacterial gradient field" instead of "wearing masks".
