I've never monitored macOS, so I can't comment on it.
I would never recommend it however, because we have enormous amounts of evidence indicating that Apple is dirty.
Linux kernel operating systems are whatever you want them to be.
If you want a Linux OS that spies on you, you can probably find one.
If you want a Linux OS that doesn't spy on you, you can definitely find one.
