The market is SATURATED with these idiots and those degrees are very specific and narrow. There's only x amount of jobs in those markets and those jobs are already being performed by others. You went into the wrong fields. The only employers that take those degree's are colleges. That's it (except criminal justice, but if you're doing that, go take the BAR exam and go to law school. Paralegals are fucking secretaries which is all that degree is good for).
