I'm not a doctor but I assume it's similar to other destructive things people do to their bodies (drinking, smoking, fake sugar, lack of activity etc) the longer you've done it the more damage you'll have done to yourself.
Cutting soy, sugar, processed carbs alcohol, starting to exercise will help you lose weight, increase libido, energy levels, lower blood sugar, blood pressure, cut inflammation, increase mental health etc. which is all great and will help you feel much better but there's only so much damage proper diet and excercise can correct so you can't really expect miracles.
Feeding your body properly with whole unprocessed foods and exercising at least 20-30min a day is probably the two most important things you could do to improve your life.
Is it reversible after cutting out Soy?
You're gonna have to add an exercise routine. It's diet AND exercise, not diet OR exercise. Yard work is not exercise.
Farming is definitely not yard work lol.

See your doc and get your level tested. You can supplement if you need to.
