"People who don't want to wear masks" isn't listed as one of the protected groups in the federal anti-discrimination law, so no it's not discrimination. Some states have additional groups (CA adds political affiliation, etc), but I'm pretty sure the above isn't listed in any law anywhere.

TN is about to add it to their laws. It will be a criminal offense for a business to refuse you business because you won’t wear a mask.
