They are attempting to separate and classify people of European decent (colonialists bad)
and those conquered and exploited indigenous people that have integrated with those European colonialists (good victims of evil Europeans)
Wait until they realize Spanish and Portuguese folks in the 15-16th century were populating North and South America (North Spanish, South Portuguese).

There are people here born from Mexican parents who are pale white because their parents have heavy Spanish ancestry, not Indio, as they sometimes call the the people who were in Mexico before the Europeans. There are some blonde and some with green or blue eyes. The idea of classifying "white" and "Hispanic" gets messy. A lot of "whites" are results of multple European countries mixing. A lot of British people have unfortunately mixed with the French back when the Normans took over their land.
As someone who used to have to identify these things per my occupation, the US Government has designations of White Hispanic and White Non-Hispanic. Your wife, being European, could identify as either simply white, or White Hispanic, because she is European and she is White Hispanic unless she has African or Asian or Indigenous ancestors and wants to claim that. The doctor's office doesn't know what they are talking about.
You can be Hispanic and be from several countries, not just Puerto Rico and Mexico. Again, your doctor's office must be stupid or running some kind of scam.
She is Hispanic from the Iberian Peninsula. I don't know her attitude on this. Does she want to be culturally Hispanic? She will always be white. Hispanic is a culture. She can choose. i don't get why it's a joke. She tells them how she wants to be identified. And please ask her not to identify as a Potato.
She is white and wants to be white. The point being was all she could describe to be is non hispanic but literally everyone else who isn't hispanic is non hispanic. Also from a historical context Hispania is the empire of the Iberian Pennisula so her only option to be non Hispanic is a contradiction because Hispanic today doesnt mean ancestry from the Iberian Peninsula.

BTW, White Hispanic I am. Still have close family in Spain. It's OK to be a white Hispanic.
Hispanic = Spanish speaking culture. Portuguese aren't Hispanic, just like Brazilians aren't. Mexicans, Spaniards, Peruvians, Tejanos, etc are Hispanic.
Might want to check out the historic Hispania region... Iberian peninsula you know in Europe.
