Edit: Goku, Vegeta, Vegeta's brother, and Broly are the only living saiyans as of latest chapter of Super. They'll be wiped out after one generation after race mixing with humans, diluting all pure saiyan heritage. I do not count alternate universes.
I like to think of the saiyan gene like a dominant trait. Even if they mix with humans, the saiyan trait can still be as potent as a full blooded saiyan. Humans have stronger emotions, so they can turn super saiyan earlier.
But Gohan got stupid weak in his high school years, to the point that he couldn't even hit SS2 again. Akira Toriyama was really absent minded until Super where Gohan got his dad to SS Blue just to beat him.

I'd say they could still get him on Namekians but I think they're considered white now
Albino Namekians were wiped out during the Great Water Drought, per Super Kami Guru, despite the fact that he drank all the water.
