We are and always been bound to God's law! Jesus once said, " Why do you call me Lord and do not the things that I say?" If you understand as I do that He is One with the Father, His commandments are all of the commandments in the Bible. You are right about the Jewish law (The Talmud) even Jesus did not obey this Jewish law, It breaks the commandments not to add to, nor diminish from the TORAH!

The tomb was found empty on the first day of the week while it was still dark.
But when did He rise?
Maybe at the end of Sabbath? The beginning of the new week. You can call that "Sunday" but the beginning of the first "day" of the week is what we call Saturday evening.

Jesus raised at the beginning of the 1st day of the week. Which is sunset, Saturday evening.
Which leads to my first question, why do people say "Sunday is Jesus' day"? I'm not judging anybody for saying this. I'm just asking, rhetorically again. Because we can do some research and find out historically why the church adopted Sunday and ignored sabbath.
These are just questions for christians to think about.
