Depends. Do you want a folder, fixed blade, auto? Do you want an EDC knife? Self-defense? Both? What are you going to do with it? Random everyday stuff? Or actual work cutting wood, rope, etc? Price range? It's a bit to think about because there's a gazillion knives to choose from.
Personally, my top EDCs are Microtech Troodon, Benchmade Mini-Reflex and ProTech TR-5, but many people like Spyderco, CRK, ZT... like I said, there's a gazillion choices.
Don't forget fishing gear. Also a cheap ham radio. Maybe a good knife if you don't have one.

I think a decent bolt action 22 and like 300 rounds of ammo are commonly overlooked. You can eat a lot of small critters that a 22 is perfect for.

22 is definitely underlooked. Not only can you get the small critters but its the proper round. You don't want to blow bunny in half.
