I'm not much of an OT scholar but from a lifetime of bible studies I cannot recall anyone called 'the mud people'. I don't know of any Golems which might just be an old Jewish 'horror story' not related to the OT. I don't know of 'Blacks' either though someone might be 'black hearted' aka 'dark hearts' like that?
I am aware of Hitler's race theory (I recall its from Mein Kampf) and what he called 'Mud People' which was something like Turks, Arabs, the Middle-eastern world and from centuries of trade routes they were, like mud, a muddy brown mix of whatever, probably Huns, mongols etc. I think the English translation was 'Mud Peoples' or maybe Muddy or Mud-blood. Or maybe that was Germans who mixed with non-Aryans and had 'muddied' children (??)
A Duckduckgo revealed some kind of children's book series with 'Mud People'.
It would be pretty weird if you were mixing up Mein Kampf with the OT (or a comic series) but maybe this is something:
Adam is of course famously made from 'mud'. From 'Clay' or 'earth' so basically all humans are 'Mud People' if we went that way. The scholars say the word 'Adam' might even mean 'Ruddy/Muddy/Clay/Earthy'
But since you mentioned Golems that made me wonder if those Jewish stories came from some Jewish 'Apocrypha'

The oldest stories of golems date to early Judaism. In the Talmud (Tractate Sanhedrin 38b), Adam was initially created as a golem (גולם) when his dust was "kneaded into a shapeless husk." Like Adam, all golems are created from mud by those close to divinity, but no anthropogenic golem is fully human. Early on, the main disability of the golem was its inability to speak. Sanhedrin 65b describes Rava creating a man (gavra). He sent the man to Rav Zeira. Rav Zeira spoke to him, but he did not answer. Rav Zeira said, "You were created by the sages; return to your dust".
It sounds like this doesn't really become a popular sort of 'fictional tale' until around 1000+ around Germany (that we know of tho maybe before) and it does seem like its based on this 'Fake Adam' from Jewish writings.
I'm still not clear if they were presenting an actual 'animated clay man' or if they just made a kind of 'dummy', some sort of animated worlds oldest 'deep fake' to deceive the judge (??)
Oh, i might mention, back to the original idea, there actually is something that seems to describe distinct 'physical' races of people but its in the old world before the flood. with some lineage (of Seth i think) called the 'giants' who seem to have notable physical power. Neanderthal types, 'heroes' but also the ones who fill the earth with physical violence. I believe Noah is from the other lineage of people. so.. in that sense there were maybe some 'races', mind you, they'd may well have looked like everyone else but physically stronger.

I wish i could remember which verse and whatnot it was but the bible definitely refers to "mud people" or persons
