As long as the guy has a sign up that says they reserve the right to refuse service to anyone thru want, or if the person has agreed to those terms either by entering or through something like an online order portal, then he's golden.
Those signs don't apply to "protected classes" though. Sign or policy or not he's legally forbidden to deny service to lgtbbq people, people based on race, disability, etc.
The hairy part is that he's also creating art, and forcing him to create something that goes against his beliefs is also discrimination- against him. That's why he's winning these cases.
