It's your business and your responsibility to make sure your employees are paid fairly. The labor contract is between you two, not the customer.
Tipping is the purest form of merit pay.
It's not the customer's obligation to pay your employees wages directly. That's on the employer.
Is it your restaurant? Are you the waiter?
Then where do you get off telling them how to pay their employees?
