I wasn’t expecting such blessings as I was confident in my previous results with the Scott’s Sun n Shade mix, but now I’ve a conundrum on my hands. How long does it normally take for it to reach 2 3/4 inches for harvesting?

you dont want to prematurely harvest at 2 3/4 inch. you want to wait for the full 3 inchs. :)
