I'm pretty sure the statement "most that's used in food comes from human hair" is false.

The cost difference between L-Cysteine from animal byproducts and that from human hair or coal tar is huge.

Well it involves China so it’s hard to find good info on it. I saw a video about this 10 years ago and they had truckloads of human hair and giant vats that looked like something a large brewery would use. I still try to avoid eating it.

I remember them finding cargo containers FULL of uyghr hair and no one knew what it was for.

Short hair maybe, but long hair is more valuable for wigs and weaves.
