With that in consideration, the average Chinese person probably is technically consuming well over 200lbs of sugar a year. Then there's a plethora of other reasons why Chinese populace as a whole, is even less healthy (and thus more susceptible to illness) than even obese populations.
But the point is, from China's standpoint, they were dealing with a deadly new virus, and they did nothing to stop its spread internationally. As they were literally boarding people up into their homes, they were also boarding people to fly internationally in huge numbers. That's not a mere oversight, that can't be anything but intentional and motivated by nefarious intent.

What you're doing is creating a straw man argument, i.e. posing an argument that was never made. Of course it happens naturally. But being able to do it artificially is clearly beneficial in making bio weapons, especially since it's much easier to attack with an existing virus that is suddenly human transmissible, rather than a designer virus that would have zero deniability by the very nature of the tell tale signs of being engineered.
What makes it an attack though, has nothing to do with whether the virus naturally became human transmissible or was coaxed. What makes it an attack is how China behaved in response to the virus. They hid it for months and allowed their people to travel abroad in droves to spread it globally. As they were locking people in their homes and blocking roads with boulders, they allowed people to board international flights in record numbers.
Not to mention if you mutate human viruses, who knows who might already have an immunity. But humans would have 0 immunity to an animal virus.
