Some of the nutrition stuff (like getting kids to eat veggies and not sugar crap) kinda needs to be forced on the kids. They want stuff that tastes good... with how good we are at modern machining of food, we can make cardboard taste amazing... yet still have the nutritional value of cardboard.
That said, if the end result is food in the dumpster, better off giving it to a local food shelter than to the schools... at least that way it gets used.

I'm a teacher and you're the closest one to right in the whole thread. My school had to ban door dash because kids were ordering food. They have free lunch because we had a hurricane so for whatever reason every kid gets a free meal every day. They dont like it so they were getting food through door dash. Their parents apparently give them access. I also think people underestimate how nihilistic kids are with "free" stuff. Every day, I have broken pencils on the floor. Kids for whatever reason just like to break shit. I can see them taking the free meal just to trash it. I never go to the cafeteria though, that's like volunteering to eat in an insane asylum.

I remember in Middle School (1968), I would get a real hamburger-lettuce, tomato and pickles. Nothing processed. They were good. They had fruit vending machines. You could always get fresh fruit.

Teacher here. We do. Our free lunch program is based off use. So if they don’t eat (or at least go through the line), then our daily numbers can reach a point where we no longer qualify as a school/district. I am in a VERY poor school district bumfuck nowhere and there are a few families that could use free lunch, but the county pressures us and we pressure the kids to all get a lunch if they are just not eating anything to help those who need it.
At least that’s how I justify it. But yes it almost all gets thrown away. You would be amazed at how many kids skip lunch because their meds make them have no appetite.

No. You could measure the TRUE, authentic demand for food that people will actually eat, and then order and provide that calculated amount, and reduce overall waste. You could use math, statistics, historical data to calculate likely future outcomes and mathematically reduce waste.

Well, isn't the solution "recognize that the schools don't need to make as much food'? Since the food preparation estimates are likely based on the food taken in the past, then kids taking trays of food they don't eat would ultimately create waste by screwing up the estimates. It doesn't matter if the wastage technically comes from the kitchen or the trays—the reason the wastage food exists in the first place is because the kids are pressured to take trays.
But if the kids didn't have to take trays, and the waste was always recognized in the kitchen rather than disappearing into trash cans where it's counted as consumption, then the estimates on how much to prepare would be corrected.

The suggestion is that by inflating the numbers, they are making some kind of marginal statistical percentage profit. So if they artificially inflate the numbers, they make more profit of the federal or state government. So what is happening here is grifting, or manipulation of the system. Schools have incentives to inflate their food lunch statistics and data for funding because they make a percentage profit off each dollar received.
Government is inherently inefficient and corrupt and prone to waste fraud and abuse.
Each region down to district would need an executive chef to manage things. But shit could be standardized relatively easy to provide actual good food that kids would even eat. The problem is the government wants to spend on "overhead" and not on quality.

To change that it would require a change to how budgets are decided. Government runs off a "use it or lose it" mentality where if you're not spending funds you obviously will never need them again so those funds are now gone. It's why you see so many construction projects and road work done right before the next fiscal year, the city and county is trying to use up every last penny they got to make sure they get at least the same amount next year.
Yes, it sounds obvious to just spend what you need and don't overspend when you don't need to but it runs into the issue of bureaucratic bullshit that has led to so many other issues. Unless that gets solved the money waste even at lower levels like city and county never will either because they're just as bogged down as at the federal level.
Most schools no longer have recess and "PE" is generally just walking around a track now. The problem I see a lot in this thread is the same as in a lot of other threads. People that are so stuck in their own past that they cannot see that things have changed, or refuse to even go look and see and believe that things are exactly the same as they were before.

Obviously things change, but a lot depends on location as well. If Smalltown, USA schools are anything like mine was and still is, community sports and physical activity are a large part of the curriculum.

Planes do dump fuel before landing on the carrier to meet weight limits. Landing a heavy plane shortens the lifespan of the plane and/or arrest apparatus, possibly even mechanical failure.

My wife is a teacher. Her county has totally free lunches for all students thanks to a tax levy a few years ago. For the "virtual" students, they offer a lunch pickup option. Since many parents don't pick it up, they send the extra home with the teachers. I have basically been eating school breakfast and lunch since September. Their meal program has improved over the last decade.
I didn't want to link to the HuffPo article, but they were already improving the lunch program when that fruit from England arrived. They also did some very deceptive editing for the show to pump up the drama. The only thing I don't care for are their chicken patties and nuggets because they have a vegetable fiber filler and added vitamins. It's like chicken with sawdust.
Edit: Also, the kitchen he set up downtown in Huntington is still there. It's now run by the Marshall University Dietetics program. They have some pretty fun cooking classes like "Date Night in The Kitchen", etc. Now they also offer online sessions too.
I'll be a counter-point here - I was on free/reduced meals throughout K-12 and I ALWAYS ate all my food (and usually some of my friends' food, too).
Then again, I also had to work with my dad most every day doing contractor work and other hands-on stuff. I realize I'm not the average free-and-reduced-lunch kid, I just wanted to say that there are those of us that actually did get a huge benefit from actually eating breakfast and lunch at school (and the backpack program in elementary school).
To get the cheapest, smallest meals at school (much less than the calories needed for a growing teenage boy - and certainly not healthy by any means), it would have been around $20-25/kid/week. I graduated high school in '11, for reference. Reduced lunches were like a quarter I think? Maybe more, I don't really remember.
As for how broke we were, the answer is yes and no. When I was very young, most of my clothes, shoes, and stuff came from the repo houses I cleaned with my dad. Once I was in about junior high or so, he actually made pretty decent money (by "decent" I mean not effing dirt poor) - but my mom blew a lot of money on frivolous bullcrap. At any rate, their incomes combined were still below the poverty level for a family of 5.
I learned the value of work and all sorts of other wonderful virtues from my dad. I also learned that I never wanted to put my children through anything like what I was put through. Growing up in the "diverse" schools, living in one of the trashy areas of town, having parents that suck with handling money - hard pass on all of that.
Instead, I busted my balls, went to the Ivies, got my MBA with a 4.0 in three semesters, and my life (and that of my current/future family) looks to be great! Assuming, of course, that I don't get killed because I go fight in the coming civil war or something, haha.

I went to private Christian school K through 12. Not once did the school provide lunch for me. That was mom's job and she sent me to school with a lunch. Yes the school did have "hot lunch" once in a while (every 2 weeks maybe?) and it was volunteer moms, yes all moms, who would come in and serve kids hot food.
I remember the first time I even learned of the idea that schools fed the kids lunch. It was when I was 15 and had to go to The Public Highschool to take the government mandated driver's education classes. We had to meet in the cafeteria of the school on day 1 and that is where I learned that some schools have cafeterias. I had never been inside this building before so I needed help to find the cafeteria. I was definitely an outsider! It was a weird concept to me. Why would a school need a cafeteria? Can't you just eat your bag lunch at your desk? They also had a swimming pool.
We had a Pizza Hut and Wendy’s kiosk at our high school, to go along with the regular cafeteria line. We also were allowed off campus lunch, which most people did.

Well, isn't the solution "recognize that the schools don't need to make as much food'? Since the food preparation estimates are likely based on the food taken in the past, then kids taking trays of food they don't eat would ultimately create waste by screwing up the estimates. It doesn't matter if the wastage technically comes from the kitchen or the trays—the reason the wastage food exists in the first place is because the kids are pressured to take trays.
But if the kids didn't have to take trays, and the waste was always recognized in the kitchen rather than disappearing into trash cans where it's counted as consumption, then the estimates on how much to prepare would be corrected.

The suggestion is that by inflating the numbers, they are making some kind of marginal statistical percentage profit. So if they artificially inflate the numbers, they make more profit of the federal or state government. So what is happening here is grifting, or manipulation of the system. Schools have incentives to inflate their food lunch statistics and data for funding because they make a percentage profit off each dollar received.

Government runs off a "use it or lose it" mentality where if you're not spending funds you obviously will never need them again so those funds are now gone. It's why you see so many construction projects and road work done right before the next fiscal year, the city and county is trying to use up every last penny they got to make sure they get at least the same amount next year.
Yes, it sounds obvious to just spend what you need and don't overspend when you don't need to but it runs into the issue of bureaucratic bullshit that has led to so many other issues. Unless that gets solved the money waste even at lower levels like city and county never will either because they're just as bogged down as at the federal level.

Most schools no longer have recess and "PE" is generally just walking around a track now. The problem I see a lot in this thread is the same as in a lot of other threads. People that are so stuck in their own past that they cannot see that things have changed, or refuse to even go look and see and believe that things are exactly the same as they were before.

Obviously things change, but a lot depends on location as well. If Smalltown, USA schools are anything like mine was and still is, community sports and physical activity are a large part of the curriculum.

My wife is a teacher. Her county has totally free lunches for all students thanks to a tax levy a few years ago. For the "virtual" students, they offer a lunch pickup option. Since many parents don't pick it up, they send the extra home with the teachers. I have basically been eating school breakfast and lunch since September. Their meal program has improved over the last decade.

They also did some very deceptive editing for the show to pump up the drama. The only thing I don't care for are their chicken patties and nuggets because they have a vegetable fiber filler and added vitamins. It's like chicken with sawdust.
Edit: Also, the kitchen he set up downtown in Huntington is still there. It's now run by the Marshall University Dietetics program. They have some pretty fun cooking classes like "Date Night in The Kitchen", etc. Now they also offer online sessions too.

I'll be a counter-point here - I was on free/reduced meals throughout K-12 and I ALWAYS ate all my food (and usually some of my friends' food, too).
Then again, I also had to work with my dad most every day doing contractor work and other hands-on stuff. I realize I'm not the average free-and-reduced-lunch kid, I just wanted to say that there are those of us that actually did get a huge benefit from actually eating breakfast and lunch at school (and the backpack program in elementary school).

To get the cheapest, smallest meals at school (much less than the calories needed for a growing teenage boy - and certainly not healthy by any means), it would have been around $20-25/kid/week. I graduated high school in '11, for reference. Reduced lunches were like a quarter I think? Maybe more, I don't really remember.
As for how broke we were, the answer is yes and no. When I was very young, most of my clothes, shoes, and stuff came from the repo houses I cleaned with my dad. Once I was in about junior high or so, he actually made pretty decent money (by "decent" I mean not effing dirt poor) - but my mom blew a lot of money on frivolous bullcrap. At any rate, their incomes combined were still below the poverty level for a family of 5.
I learned the value of work and all sorts of other wonderful virtues from my dad. I also learned that I never wanted to put my children through anything like what I was put through. Growing up in the "diverse" schools, living in one of the trashy areas of town, having parents that suck with handling money - hard pass on all of that.
Instead, I busted my balls, went to the Ivies, got my MBA with a 4.0 in three semesters, and my life (and that of my current/future family) looks to be great! Assuming, of course, that I don't get killed because I go fight in the coming civil war or something, haha.

In California the kids are fed whether they are in school or not. During the summer, before the hoax, all children could go to the school and eat, any child. Some families got deliveries, same story, but you have to pick up the food now. I went to private Christian school K through 12. Not once did the school provide lunch for me. That was mom's job and she sent me to school with a lunch. Yes the school did have "hot lunch" once in a while (every 2 weeks maybe?) and it was volunteer moms, yes all moms, who would come in and serve kids hot food.
I remember the first time I even learned of the idea that schools fed the kids lunch. It was when I was 15 and had to go to The Public Highschool to take the government mandated driver's education classes. We had to meet in the cafeteria of the school on day 1 and that is where I learned that some schools have cafeterias. I had never been inside this building before so I needed help to find the cafeteria. I was definitely an outsider! It was a weird concept to me. Why would a school need a cafeteria? Can't you just eat your bag lunch at your desk? They also had a swimming pool.
We had a Pizza Hut and Wendy’s kiosk at our high school, to go along with the regular cafeteria line. We also were allowed off campus lunch, which most people did.

My state spends the least in the nation per student, but has one of the highest graduation rates. It also has the highest national rate of intact families, which I suspect has more than a little to do with it. Throwing money at schools when it's a cultural problem does nothing but waste money.
