I travel the US for work and see atmospheric spraying in just about every area. Jet planes making huge tic-tac-toe patterns in the sky that dissipate into huge sheets of white clouds that last all day. It drives me nuts that almost nobody else seems to even notice it. Don't remember having a vote on whether or not blocking out the sun is a good idea. What gives them the right?

they become white clouds because they are clouds

jet exhaust is primarily water. there are also some particles of unburned fuel

at high altitudes the air is very cold. the water forms droplets around the particles and the droplets freeze

clouds are water droplets suspended in the atmosphere thus contrails are clouds

It's sad that you even need to explain this. Edit to add: Although the study of the atmosphere is rather interesting. Such as the thermosphere, layer where ISS orbits, is actually high in temperature, like 4500 degrees. But it feels cold due to lack of gas molecules.
