I'm assuming different states have different laws? because in my state you can definitely go to a gun show and buy whatever you want.... I've literally done it a ton of times....

You cannot buy whatever you want. If you buy from an FFL at a gun show they have to do a check. You can buy from a private party without a check, but again you can't buy anything you want. You can only (legally) buy guns that are legal to sell.
Most guns sold at gun shows are not private to private sales. Every gun show I've ever been to was 75% FFLs or more.

I don't think I've ever seen a non-FFL at a gun show. Partially because if you don't have an FFL and sell "too many" firearms, the ATF is going to be all up in your ass.
A lot of smaller shows I've been to have people there basically running a gun yard sale. They'll come with 10-15 guns they don't want anymore and see if they can dupe anyone into taking them. Most gun shows charge too much for a table or booth to make that worthwhile (especially these days when gun demand is so high that LGS are selling guns on consignment for crazy prices in a hours or days).
I've also seen two guests at gun shows get to chatting and end up making a deal and selling a gun right there on the floor, but that's not unique to gun shows. I see that happen almost weekly at my range.
it's become progressively riskier to sell guns to strangers (private face to face sales). In the 70s people joked about becoming friends with anyone they wanted to sell a gun to (re: I knew him, we are friends). Not funny now. Seems risky to vouch that someone you don't really know is legal / ok to buy a gun.. from you.
if you sell more than a few guns a year the ATF will want to have a chat about why you didn't become a FFL... who are required to do background checks.
