mRNA is a script that codes for a protein. But mRNA can't create proteins. It'd be like saying that if I put a blueprint in the middle of a street that it will create a building that blocks the street. The mRNA is the set of instructions for how to make a specific protein. It has to go into the cells where other proteins and enzymes then make that protein. I will not happen randomly in your blood stream because that machinery is not there to do it. Also the protein encoded for by the COVID vaccine is a membrane-bound protein so it would migrate to the cell membrane and stay there. Not spill into your blood stream.
Proteins naturally fold into their most thermodynamically stable form under normal cell conditions. Yes, it's possible that a misfolded protein can happen and it can cause problems but this is pretty rare. Prion diseases are indeed caused by misfolded proteins but it's misfolding of a specific type of protein and prion diseases are almost entirely neurodegenerative disorders as far as I'm aware. They're still not super well understood though.
