I work in a high volume semi-fine dinning restaurant. Women can not hang. Plain and simple. Can they cook? Sure. But when the SHTF and we are balls to the wall they panic, are unsure of themselves, get too flustered, and are unable to snap back and pick it up after making a mistake. I've been at this restaurant for 15 years and we've had about a dozen female hires and not one lasted more than a year
I worked in hospitality for years in many different places and I never worked with a GREAT female head chef who could keep her shit together like the men. All you have to do is compare the amount of world renowned chefs male to female ratio and you can see the truth in this.
Professional kitchens called... they said they don’t want women either. Try pastry.

I think the trait we're looking for here is "autism", not as in the spectrum, but the extreme commitment to one thing required to excel.
Such a commitment has costs that can be unreasonable. Statistically, this is more of a male thing than a female thing.
If such a difference exists, it is to be recognized and appreciated. It's not something that reflects poorly on either men or women.
