I run my own email server at home on a raspberry pi. My domain actually points to a small VPS that runs a mail filter server, then anything that's not spam is sent to my raspberry pi and not stored anywhere but my home. Been running this setup for about 5 years, works pretty well.
I read different tutorials for different things and just mashed it all together. It's probably easiest to just get a mail server running on a VPS first, there's plenty of tutorials out there for that.
