My daughter's company is pulling this, her boss continually asking her if she has had the vaccination. She has been replying that she doesn't feel comfortable discussing her medical stuff and the boss says ok. Then comes back later and asks again.

These emails have been ongoing since the availability of the vaccinations.

Tell her to tell the boss "because of female health reasons". This usually shuts down male bosses on just about any discussion.

"Why were you late today?"

"Female health reasons"

What your daughter's employer is doing is illegal. Tell your girl not to put up with that strong-arm shit, and start threatening to sue. They will fold. Bet you that. Read The Health Insurance Portability and Accountability Act of 1996 (HIPAA).
