I haven't been to a gun show in a few years, but even when I bought my first AK it was at a gun show and I walked out with it same day. I'm not sure how its done where you are at, but for where I was at if the gun show is big enough they had ATF reps there that processed the background check right away.
There's nothing about a gun show that is any different from a B&M store that would make it any harder to do a full background check. I think the ones here are done completely over the phone, not even a fax needed. I think ours are handled by the state too though I believe it varies by state.
