Vaccinated for what exactly? If he didn't specify the Chinese virus, just say yeah, I've been vaccinated.
Tell them the truth. Some hospitals require a negative covid test before the procedure and I think you arent supposed to be tested for a certain period of time after the vaccination.
Just tell him you're on the waitlist for it and leave it at that

Tell him you are in the Placebo group and can not take the experimental gene therapies. Stress the experimental gene therapies aspect and mention that you were unaware of any actual vaccine. If he's legit he'll leave you alone right there.
If he persists remind him of his Oath, remind him of the Nuremburg Code, remind him of Informed Consent, remind him of the fact that experimental drugs can not be mandated by anyone legally.
That all said, I would not trust my health to a person who is pro-that-therapy.
