OP is somewhat incorrect. They can ask. But it's ultimately up to you to deny them your medical records and history.
However the legality issues come when they specifically demand it, that violates your HIPAA rights, especially when the status of your employment is contingent upon it. Additionally they also technically cannot fire you on the grounds that you haven't shown vax records, as that is wrongful termination on the grounds of discriminating against your health. (They can fire you, but again, its a huge liability and you are within your right to file a lawsuit, as well as collect unemployment)
You also haven't signed any amendments or anything in your employment contract that states that you must wear a mask, nor is a mask a requirement in terms of any dress code your work may have.

An employer can make an employee life a living hell, and then fire them for performance. In some states they can fire an employee for any reason, or no reason at all.
"At-will" employment is a crock of shit. You can still sue the company if you choose to, and oftentimes win if you have a solid case. "At-will" doesn't excuse an employee from discrimination cases, labor laws, and just laws in general.
If an employer makes your life a "living hell", and you have records/notes/whatever else to prove it, you have a pretty straightforward case of harassment, and damages.
