I have been making Kimchi for several years now. I love the stuff. I make it for my relatives as well, spice adjusted. Kimchi is one of the more healthy things you can eat.

Man I got really into Korean BBQ a few years ago and started making some amazing Korean pulled pork sandwiches (I'd take a full day slowcooking the pork in all the barbecue and chili sauces, various spices, etc). It was always topped with either Kimchi, or... idk the name, but it was basically like shredded carrots in rice vinegar (sometimes both on top). Ugh, soooo good.

I've gotta do that. I've been on an Al pastor pulled pork kick, next is Korean bbq then.

Yea it's definitely worth it, and the pork even comes out great in a crockpot if you feel like making it an easy dinner. Can llterally just throw it all in, and decide whether you want to go w/ the kimchi or carrots for the topping (I like both, but the carrots were surprisingly good. I'd have to double check but i'm pretty sure it's literally just the raw shredded carrots with rice vinegar).
