We got a lot of positive feedback and good ideas for this last week. Thank you again for the positive response!

BUDGET FRIENDLY RECIPE

Chicken Breast In Sour Cream Sauce

Ingredients

  • 2 nice size chicken breast cut into chunks or chicken parts
  • 2 Tablespoons vegetable oil
  • 2 Tablespoons butter
  • 1/2 a medium onion chopped
  • 1 sweet red pepper chopped
  • 1 Tablespoon minced jarred garlic
  • 1 Teaspoon Paprika
  • 1 cup chicken broth
  • 1 cup sour cream
  • 3 Tablespoons all purpose flour
  • Salt and pepper to taste

Directions

  1. Place the oil and butter in a large skillet over medium to low heat. Melt the butter, place chicken breast in skillet and brown on both sides, remove from skillet to a platter.

  2. Place the chopped onion, sweet red peppers and minced garlic in the skillet and saute until onion is translucent and peppers are tender. Add paprika and blend together.

  3. Add chicken broth to the skillet and place chicken breasts in pan to cook covered for 25 minutes or till chicken is tender. Note, using cut up chicken parts ( bone in) will increase the simmering time to about 45 minutes.

  4. Remove chicken to a plate and keep warm. Blend the sour cream and flour together, whisk into the liquid in the skillet and cook until thickened, salt and pepper to taste. Pour over chicken. Serve.

Honey Mug Cake

Ingredients

  • 2 tbsp butter, melted
  • 2 tbsp honey (runny)
  • 1 medium/large egg, beaten
  • 1 tsp vanilla extract
  • 2 tbsp sugar
  • 4 tbsp pastry flour
  • A pinch of salt
  • Butter, for greasing

Directions

  1. Butter the inside of the mug generously.

  2. In your mug, mix together the butter, honey, egg, and vanilla extract.

  3. Add in the sugar, flour, and salt, and stir until fully combined.

  4. Microwave for 1 minutes 15 seconds (this number may vary slightly – check the notes below), and allow to cool slightly. Drizzle with more honey for extra sweetness. Enjoy as soon as it’s safe to eat!

I was a design engineer for a machine builder who laid me off at the beginning of this pandemic - half his business got put on hold and he couldnt keep me on. I'm attempting to teach myself to crochet and do embroidery, and it's pretty fun! Embroidery is a little easier so far, but I'll be getting into some medium level stitches soon. :D

Beware of the granny square! Unless you WANT to be addicted to crochet. Grannies are great because you can finish one in no time at all. You get that sense of completion. Then you wind up making a dozen and can't stop.

I just started practicing granny square this week- I think once I get it started the pattern seems easier - it's that first few stitches around the ring I get confused at. My first one was alright- a bit lopsided but nought expecting it to be perfect first go. Currently practicing puff stitch tonight. I'm addicted now lol

You know it's funny as a kid used to absolutely hate the farm life because of how isolated it was than I got red pilled and realized just how bad things truly are. I live in a red part of a blue state but lived in NYC for a short time.

I dehydrate all my kitchen herbs. It saves a lot of money. I also LOVE dehydrated chamomile to make a tea from it, same with mint leaves. It's so much better than store bought. I also make beef jerky. It's so good! That stuff is insanely expensive from the store. My boys eat it all in one sitting.

My guilty pleasure hobby has always been politics, but in the past month I've kicked it into high drive by checking out groups of patriots in my area and attending commissioners meetings, school board meetings and health department meetings. The next two weeks will be full of collecting signatures for a resolution against vaccine discrimination that I'm heading. Pray for our county!!

I got back on Facebook after being off it for 6 years and searcher all the local patriot groups. I connected with another mom in the neighborhood and got on their school parent chat to go to board meetings together. I got on telegram and searched county patriot groups. And I met some people at the commissioner and patriot meetings to network with. Those are my suggestions for where to start!

Anyone, anywhere, can make lifestyle changes that make one more self-reliant in hard times. Indoor hydroponics, canning, preserving & stocking up on ammo are all good skills for a person to have.

If you live in an apartment, grow some lettuce and cucumbers on your patio. Becoming self-reliant doesn't mean going from an urban apartment or suburban house to homesteading off grid in the forest (although that would be very worthy goal, one which I aspire to, knowing I'll probably never get there).

There are degrees of self-sufficiency, all of it valuable. Finding ways to DIY takes ingenuity, creativity, on-the-fly problem solving & self-reliance, qualities I'm trying to build in myself as we face more uncertain times.

It's good to be a MAGA woman, a prepper, a shooter, and the enemy of tyranny.

Vinaigrette from South Louisiana. Easy and fun with apples, lettuces, shaved fennel, satsuma, oranges etc: Easy and will keep just like any salad dressing in the fridge for a very long time.

1 T shallot, minced

1/4 cup creole mustard

1/4 cup Steen's Cane Syrup

1/2 cup apple cider vinegar or sugarcane vinegar or even coconut vinegar

1/2cup virgin olive oil

1 cup peanut or neutral flavored salad oil

2 T Italian parsley, minced

1 t black pepper, freshly ground

2 tsp sea salt

Blender it all, save for later and can be served anywhere we like vinaigrette.
Grilled chicken sliced thin, some apples sliced thin, walnuts, pecans or whatever. Just throw all your lettuce and all you like in your salad in a bowl and add in a little of this dressing. Easy and good.

The cane syrup is a regional thing and the creole mustard can be subbed with any coarse mustard.

Replace cane syrup with honey, ok. Replace cane syrup with pepper jelly (South Louisiana thing,) ok Replace cane syrup with any marmalade, ok.

I spent an hour today rearranging our library to accommodate my collection of Warhammer 40k novels… heh, I think I’m one of like a dozen women in the Western hemisphere who’s into that. But damn, at least the men are all badasses. If there’s a live action movie set in that universe, Daniel Craig need not apply.

My other hobbies involve sewing. Even though the fucking SJWs are taking over costuming as well. But sewing is a wonderful skill, highly recommend it to anyone!

I would be doing yard work, but the baby takes up most of my time. That, and trying to keep the military from screwing me on my way out the door. It’s amazing how many ways they have to screw you. (Another reason I like 40k; I’ll take Space Marines verses tyranids as fun escapism any day over the mind-numbing bureaucracy)

Find a local cow share program. You can literally buy a whole cow butchered, or 1\2, even 1\4. We split a whole cow with my mil every year. It's like $280 for the processing fee for 1\2 a cow in Texas. But its enough beef to fill our entire deep freeze.

Yep, that’s what we did! Find a local butcher - it was cheaper overall with the more expensive cuts of meat. Usually Sep when the 4H shows are going on, that’s when they’ll buy and butcher - at least where I’m at in commiWA

I'm a man who loves cooking and baking too. I found that cake is the hardest to bake compared to pastry, bread, and cookies because the batter is liquid while others are solid dough. It's either overbaked with cracks on top, or underbaked with batter inside. The only kind of cake I can master is New York cheesecake using waterbath method, which guarantees to heat evenly.

Oh, excellent! Good luck and enjoy! Speaking of cheesecake though, the only thing that gets me frustrated is the leaky bottom. I have a round cake pan and a square one, both have a removable bottom. When it's wrapped in aluminum foil and put in hot water, at the end there's always a litte bit of water leaking in and wetting the crust. Any advise on waterproof?

I'm down with the ramen game and the roast chicken. All perfectly adaptable and I'm old and single so it works out well.

Crawfish Boil I have a system too. My notes are included and I tend to be particular but this recipe works well and folks are happy. Can be expensive in the long run. If I sound sarcastic here it's because I'm surrounded by "crawfish authorities" that are so sure they boil the best that I have to be cocky. And this recipe was developed 10 years ago. I copied and pasted. No offense to anyone here if I sound like a dick.

12 gallons water

7# Zatarrain's Dry Boil Mix (1.5 containers aprox)

1 ea 8 oz container liquid crab boil

1# kosher salt

1# light brown sugar

1# whole butter

1/2 cup cayenne pepper

1 cup dry granulated garlic

1 cup dry onion powder

3# onions, peeled and halved

3# whole garlic heads, cut to expose cloves

1 ea celery bunch, cut into thirds

12-18 lemons, juiced and ground with juice in blender, cut lemons in quarters and throw the whole things in the Vitamix. Grind up until pretty small.

20# + ice

Clean crawfish with running water in an ice chest for 30 min at least. Open drain hole and drain several times until water comes pretty clean. Don't use any salt to purge. Pull out the dead and floating crayfish as you see em.

Simmer everything for 20 minutes reserving the lemon

Add cleaned crawfish to pot, cover, and bring back to just a boil as quickly as possible.

Turn off the pot immediately, add all the lemon, a bunch (20#) of ice, quickly stir well to distribute the lemon and cool the boil. Cover and taste every 5 min.

If you have frozen corn, add it at the soak as well. It's already cooked and will help cool the boil.

Should be ready in 15 min at most.

My personal notes on crawfish boil:

Crawfish don't need to cook after they boil. They'll be cooked *well before they come back to a boil. Crawfish are fully cooked at 145º so trying to boil them any longer will just ruin and overcook them.

The ice encourages the shellfish to sink in the water and at the same time absorb the seasoning. You need the ice to cool the boil and to dilute the concentrated salt and seasonings. Don't skip this step or you'll ruin your crawfish with too much heat and over seasoning.

You've cooked crawfish countless times and everybody tells you that you have the best recipe. Good job, I guess. But understand what's really happening.

This recipe is developed with a very solid and educated understanding of cooking and flavoring techniques with special emphasis on temperature of fully cooked shellfish protein. No matter where you're from, where you get your crawfish, what pot you use, what seasoning, you name it….crawfish are cooked at 145º everywhere in the world. It is essential to understand this above all. Boiling for 2 min or 5 min or whatever is silly and will result in overcooking and a damn shame. If the water boils, you are well past the cooked temp. They only say "bring to a boil" for an easy reference because it's doubtful that you'll have a biotherm or thermocouple internal temperature gauging tool on hand.

Lemon at the end during the soak is also essential. Heat breaks down the fresh flavor of lemon and we want bright, fresh flavors.
Don't get lazy and put all the lemon in at the beginning. Sure, you'll still have pretty good crawfish and everybody will cheer and tell you how awesome you are. You aren't awesome if you're lazy.

Love me some ladies night! I love my fellow lady pedes. Did some prepping this week, probably should have started sooner. Also bought meat from a local butcher and it was much cheaper than than the grocery store, highly recommend. Tomorrow I’m going to spend some time rearranging the pantry to accommodate our new items. Love LNC! Recipes are fun, I have tons to share. I don't cook all the time, but I really enjoy it. Plus it's good when your audience lovessss the food. LOL. Will be baking some pumpkin snickerdoodles this weekend for a Halloween friend event.

Last weekend we got a hog to fill the freezer. More so the husband did, but I helped of course!

In terms of other things, I do a lot. Let's see...video games, crafts, sewing, photography, fishing, painting...I mean guns too, but ammo is scarce.

I have a cricut maker and a heat press, so I also make shirts for us too. Mostly have just done husband's work shirts for our company.

Then a few for our dog breeder in memorial of her heart girl she lost to bloat.

We also have chickens, rabbits (plus baby rabbits), and baby turkeys. Check em out under the animals community!

Two big great Danes that keep us laughing.

How is everyone's drive lately to do things they used to enjoy? I'm trying to find it, but it's not here much.

I still try. I've also just been worn out from work. It's so mentally and emotionally taxing. With supply shortages, and just watching my job's account drain...and bosses not doing anything to help it. Makes me wonder how long I'll have a job.

On a side note, been watching some classic Halloween movies. So that's been quite fun.

Looking forward to the weekend, because we're finally supposed to get cooler weather. It's been hot and humid, per usual in Texas.
