I use a deep fryer with oil. Usually use canola or vegetable. Whatever's cheap on sale.
I use corn meal, flour, spices in a big zip lock bag.
I dip each piece of chicken in egg, then throw it in the zip lock bag and shake. Repeat twice. Back into egg bowl. Back into bag. Shake again.
Then put into deep fryer. Chicken usually takes about 20 minutes at 400 degrees.
Thinner slices cook faster. french fries cook faster.
The steam and oil makes a mess. But i control the hygeine.
Saves money. I can reuse the oil or keep it for about a month. Then I use the oil for other things like chainsaw oil or oiling metal parts outside or put the oil on springs or to coat wood from drying out.
Now they have deep fryers that don't require oil. I heard they work well. You should look into that

It works. oil is less heavy than standard bar and chain oil but it does the job. Plus bar and chain oil in store is overpriced. Just use old vegetable oil. Smells like french fries when I cut down trees. LOL

Grocery store fried chicken is easily better than any fast food crap. If it’s a high end grocery store, the fried chicken can be downright good.
Especially because it's usually older and more mature people who are working there. They actually care at least a little bit about the product they're putting out there.
Hell, around here, the best fried chicken places are fucking gas stations. I don't understand it. When i was a kid gas station food was to be avoided at all costs. This local mom and pop station has a full kitchen serving essentially a different home cooked meal for lunch every day.
