The Maillard effect from searing meats create brown fat that becomes trapped in the body. Personally, I use a sous vide method with the product Anova. Put the water at 151degrees and forget about it. It can’t over cook and my meats are perfect every time. It’s a chef method too for a perfect steak at a restaurant b/c you can leave it cooking for however long b/c the water temp remains the same. Smoked meats are next level.
