
Let’s talk a little Potato salad. Ok so I made my first potato salad first time in my whole southern life. I used Yukon gold. I’m a little disappointed how it looks, not like this. Not going to use them next time. Chunks too chunky. What’s y’all cooking for the 4th?🇺🇸

Go to a restaurant supply store and buy a commercial chopper, the type you put the veggies on the grid and slam it down. They’re a little expensive but will last forever. You will use it for everything.

It looks OK to me! Some people swear by red potatoes, I like the good ol’ basic Idaho potatoes, I make sure they are really chilled when I cut them up. I include celery and onions (white or vidalia), and crumbled crispy bacon as the last ingredient. I used a mixture of mayonnaise, mustard, a little bit of sugar, and season it with coarse ground pepper and caraway seeds. Sometimes I will add a few chopped up hard boiled eggs, if I know someone particularly likes them. There are so many good recipes for potato salad.
Edit: Whoops, I did not answer your question, not sure what I’m cooking but there will be brownies, with extra chocolate chips. Yummy.
I use hard boiled eggs too but cook extra eggs and just use the yolk on half of them. Too much of the white not good but all the yolk is great. My secrets are you have to have some type of acid, (either vinegar or mustard) and celery salt. The extra yolk makes the dressing creamy. And I use half Mayo, half sour cream.

It's basically pizza dough - back in the stone ages I worked for a pizza place that made their own dough, and it was pretty much the same recipe. We'd make loaves like that for sandwiches and garlic bread - tasty! And very easy. I'll have to try the dutch oven method sometime. I'll have to buy one...

What other woods have you tried smoking with? Family from Texas gifted me a bunch of mesquite but I find it's sweetness doesn't pair great with anything that's not bbq
You sound like a Hickory person. I am one of those too. The trees are stately as F. You just pull off pieces of bark from a Shagbark Hickory tree or add branches that fall to the grill. This is the smell that everyone loves, it's intoxicating - true Smoke.

I made 7 pepper burritos! Green, yellow, black, jalapeno, habanero, ghost and Cambodian long pepper. Black beans. Refried beans and a hash beef.

I sauteed the peppers with a few drops of mesquite liquid smoke and a little bit of Worcestershire for about a half hour stirring frequently.
PROTIP: ANY TIME YOU ARE FRYING GHOST PEPPERS MAKE SURE YOUR EXHAUST FAN IS TURNED ON BEFORE YOU START FRYING!!! It creates a fog worse than getting sprayed with bear repellent!

I like potatoes, hard boiled eggs, white onion and celery.
Add salt pepper and celery seed.
Mix up mayonnaise yellow mustard and honey mustard.
Mix dressing into potatoes and eggs.
Sprinkle with paprika for decoration.

You're spot on with the green onions. For the texture, Yukon golds and other waxy potatoes like reds will give you firm chunks like that, better for a German style, which is chunky and tossed in a dressing. Brown/russets will be softer, which is how I like mine for southern style, more akin to cold mashed potatoes.
I always keep the skin, it has more than half of the vitamin/mineral content than the rest of the potato! Instead of the typical mayo/mustard (swap potato for egg, boom, deviled eggs) I like to use sour cream and dijon; I'm a tangy kind of gal. Bacon, cheddar, a little liquid smoke (or even better, SMOKE YOUR POTATOES) with some white pepper and green onions, around the holidays I have family members asking for literal buckets of the stuff hahaha
They sell multicolor fingerling potatoes I've seen advertised as "red, white and blue" that have Peruvian purple potatoes, which are even softer and loamy-er than browns, you kind of have to undercook them a little bit if you want it to not all blend together though, which sets you up for a firmer cook, which is a waste of a good purple potato, if you ask me...
Anyway....yeah I like potato
Other than that I like to grill burgers with some ranch seasoning inside, on toasted buns, charred dogs, cooked with mesquite
Fun fact, the fat drippings hitting a hot enough surface (whether it's a gas grill or charcoal) aerosolizes into new favor compounds, which is why a grilled burger always tastes different from one cooked in a pan/on a flat top

That doesn't look like potato salad to me. Peeled and boiled an cooled white or russets, a little mayo, a little mustard, a little vinegar, a little S&P, maybe some paprika if you feeling crazy, some celery salt. common additionas around here, chopped celery, chopped boiled egg

Truth be told one reason I have never made it home made is he has never like mayo. He was from SA and they never had it there. But over the years I have served him the Publix one and he liked it. He actually helped tonight too...I have it chillin for tomorrow.
I would say use russets and make sure to salt the water. Also as they are cooling put a couple of tablespoons of white vinegar over the potatoes and that gets rid of that cold potato taste which at least I don't like.

The recipe I used said ok to leave the skin on. I think that’s what is bugging me. You live and learn. Next time using regular russet potatoes.
The skin is full of fiber and that's where the iron from the soil is. No harm in leaving the skin on, if you like that.
We always leave skin on most things, but it seems the dressing didn’t soak in right.
Yeah, not a fan of Yukon for tater salad, like my other post. Russet is much, much better. Yukons are good with gravy and butter, with the skins on.
Making pizzas. We got a pizza oven last year and we’ve gotten really good at making them. Great food for having lots of people over because they’re pretty quick and easy to make. And everyone loves pizza. But I’ll be honest, I could REALLY go for some potato salad.
Yukons are tricky for potato salad. I use Russets, which has loads of starch granules that swell up with water when cooking. But be very careful not to overcook Russets because there is a propensity for Russets to get mushy if overcooked. However, if you cook them correctly, you’ll have perfect potato salad. My trick is to use a wide pan of at least an eleven inch diameter, and cook the Russets without stacking on each other. I use my 11.5" fry pan and I place the Russets in one layer, then fill the fry pan with water. When cooked right, I'll stick a fork in the most average sized Russet and look for the fork to penetrate the potato by just holding the fork between my thumb and my index finger only. It might sound like an over-the-top episode of Good Eats, but it works every time. Happy 4th.
P. S. Tomorrow's menu includes sausage and peppers; burgers; potato salad and barley salad with green beans, bell peppers and feta cheese.
They just looked like giant olives to me. A greenish color like. I got my hand chopper out and added the sweet relish which I had forgotten. It actually looks better now. May take picture of it tomorrow.

Best one for potato salad is waxy types like red potatoes, not starchy ones like russets. The difference is that waxy stays firmer and starchy can get mushy. But if you cook carefully to not overcook into mushy, they are okay. Tastewise reds are good though and my preference. Yukon gold is kind of midway between types but is not my preference. I tried the Yoko Ono potato but it insisted on breaking up the Beatles.

Try making an italian potato salad. Pretty much the same but instead of mayo, use olive oil. I'm not a huge mayo fan, and find the italian style a little more to my liking.
Reds work well. Skin on or off. Just make sure they're cooked well enough.

I have red and purple potatoes growing in the garden. Trying to figure out how I can make something red, white, and blue (purple) themed. Kicking around the idea of maybe purple baked potato with red crispy bacon and sour cream, or red and purple diced potatoes into a potato or egg salad.
Sous vide the potatoes in chunks about golfball size or a little larger. I put about half a stick of butter. The SV cooking process leaves the potato shape but is soft to cut. Just right for German potato salad or Mexican food like a variation on enchiladas using the spuds rather than the traditional tortilla. Makes a great base for Mexican hash when using leftovers.
Try russet. That's what my mom used, her recipe was simple - russets, peeled, boiled, cubed, some mayo, some white vinegar, chopped fresh onion and bell pepper and celery, and pepper. Easy. Everyone raved about it.
