Worked in a high end steakhouse. All weights are raw measurements not cooked. This is common.

Plus that steak looks burnt as fck meaning no moisture.

Also, this looks like a sirloin or thin filet meaning no fat which makes it look smaller.

That was probably two or three months ago. We are in a recession. People are losing jobs. Inflation has burnt through lots of people savings, and they are cutting back.

Eating out is one of the first things to be cut back on.

I went to a rather expensive mexican restaurant last night for a door dash pickup.

The parking lot was overflowing. No parking left. The Restaurant was jam packed. People partying, drinking, servers rushing all over the place. No seating left. Lines out the door.

I'm guessing these are wealthy government employees and college employees and hospital employees who all made tons of money during scamdemic, didn't lose their jobs, etc.

Also, the inflation actually helps local governments a bunch. Imagine all the sales tax revenue they are raking in. Government employees are getting huge raises now that they were able to purge pure bloods.

I don't understand why anyone is still ordering steak at restaurants. When beef was cheap, it made sense. At today's prices...steak is one of the easiest things in the world to fix better at home than any steakhouse.

And, since the relative price difference between expensive cuts and cheap is lower than ever today, go to your local butcher and get a decent cut, do it yourself and get a good meal out of your $40/per, instead of some cheap steakhouse steak that's half the size and lower quality for the same price.

A variation of the classic sear roast, IMO reverse sear tends to dry out the meat, sear first basically cauterizes it and prevents dryness, to a degree. That's been my experience, anyway.

Reason I call it a variant is I after I do the hot pan sear (I only use high carbon steel for this step) I do the roast 'low and slow'. 260-270 degrees, thick steak may be in that oven for an hour or more to get to temp, just have to play with it and learn your oven and the steaks being cooked.

Nice thing about this technique is you can easily adapt it to cooking frozen steaks, and having them turn out fantastic. Secret is to freeze them between two planks so each side is flat. Only let the steak thaw long enough for the surface ice to evaporate, then it goes straight into a hotter than hell pan for each side to sear, right into the oven after that.

Do it right and no one will ever know that was a frozen steak.

I cooked steaks at a restaurant for a couple of years. I could tell the weight by looking at it. Ribeyes and strips are very easy b/c most of weight can be judged by thickness of the cut.

The next magin inflation will effect is shelf life. You will start seeing goods expire long before their sticker date says because lack of freshness is better than lack of inventory. A restaurant I manage has already started to deal with this massively with our green lead lettuce and other produce. We turn away more than half of our produce deliveries becasue all our supplier has left is too poor quality for us to sell.

Chains also use a vacuum method to inject saline into meats, so they generally have a lot more water than just raw beef or even store bought. Although groceries, especially the cheaper ones, also do this.
