I'm a big fan of Ethiopian coffees, but it's suffered tremendously under their stupid warehousing and trading regulations. There's a ton of ruined coffee being blended in with properly processed coffee bringing everything down a notch. The Sidamo Amaro Gayo was one of my favorites about a decade ago, with incredible blueberry notes. I haven't had a lot of Ethiopian coffee that parted the heavens since that one. I can't remember when I've had a decent Yemen coffee, probably over 15 years. Ismaili always impressed me.

I've had coffee from Chiapas, it's good. I've had some great coffee from Oaxaca. Mexican coffees tend to be delicate and acidic (not in a bad way), and do best when given a lighter roast that what is normalized amongst consumers by Starbucks. Odds are there's farmers experimenting with different varietals, fertilizers, cultivation techniques, and processes in micro lot areas on their farms. If you find out about these then jump on the opportunity to taste them.
I dont know much of anything about coffee because I never gave a damn to learn, one of my sons knows what I like and I listen to him for what to buy. I have no problem with coffee from a can from WWII with a hamburger that was "rejected from the california penal system - fit for human consumption" when I was in the navy and my standards havent increased much since then. I'm a big fan of Ethiopian coffees, but it's suffered tremendously under their stupid warehousing and trading regulations. There's a ton of ruined coffee being blended in with properly processed coffee bringing everything down a notch. The Sidamo Amaro Gayo was one of my favorites about a decade ago, with incredible blueberry notes. I haven't had a lot of Ethiopian coffee that parted the heavens since that one. I can't remember when I've had a decent Yemen coffee, probably over 15 years. Ismaili always impressed me.

I like Chiapas coffees, which is easy to get here in Mexico. Otherwise, in the US you can get it from the InfoWars store.
I've had coffee from Chiapas, it's good. I've had some great coffee from Oaxaca. Mexican coffees tend to be delicate and acidic (not in a bad way), and do best when given a lighter roast that what is normalized amongst consumers by Starbucks. Odds are there's farmers experimenting with different varietals, fertilizers, cultivation techniques, and processes in micro lot areas on their farms. If you find out about these then jump on the opportunity to taste them.

I dont know much of anything about coffee because I never gave a damn to learn, one of my sons knows what I like and I listen to him for what to buy. I have no problem with coffee from a can from WWII with a hamburger that was "rejected from the california penal system - fit for human consumption" when I was in the navy and my standards havent increased much since then. I just prefer the stuff that borderline tastes like tea.

Thank freaking god. I'd have no real reason for living without coffee. I start the day with a shitty Keurig mug before a shower. Then I make a big cup in my moka pot. Then I have an iced cappuccino at lunch. Then a Nespresso around 3:00. Then a pour over or Aeropress cup around 6:00, and usually a latte at 8:00 pm.
Plus I roast my own beans. For any other coffee addicts out there, roasting your own is BY FAR the #1 secret to great coffee. You'll never go back. Most people don't realize coffee beans go stale 3-5 weeks after a roast. The stuff you buy in a grocery store was roasted 6-12 months earlier. Having fresh beans is an entirely different experience.
It's no exaggeration to say that most people have never had a fresh cup of coffee in their life.

Dried was probably the only way to transport them. Then they're kinda hard and dry to chew so grind and add water. Not sure how they moved on to hot water but that improved the caffeine availability. I think I recall hearing they didn't use filters.
