You can't enter a guilty plea and then go on a rant at sentencing about how you are not guilty. The judge asks you at the time of entry "You acknowledge that you are entering this plea because you are guilty and for no other reason?" And the defendant must answer "Yes, your honor." Or else the plea must be rejected by the court.
Brady violations are grounds to vacate a plea. Withholding this video evidence from his defense is a Brady violation. All he has to argue is that based on the evidence he had access to, he was going to be found guilty. He could have entered a no contest plea. But that is basically semantics. It would not likely have any substantive effect.
