Soy doesn't contain any estrogen. It does contain a chemical that is somewhat similar in shape, but it does not function the same as estrogen in the human body. There is no medical literature supporting soy causing the growth of man boobs, and only a tiny number of cases even suggesting any connection.
The entire amino acid argument is only relevant if you are only getting exactly enough protein to avoid malnutrition. For anyone that has a diet with excess protein (which basically everyone) there is no medical literature suggesting that there would be any performance or health differences.
The article opens up by talking about how similar the calorie content of the impossible burger is to a regular burger and then closes by saying it is full of fattening oils. Any burger made using ground beef is going to have very nearly the same amount of fat and often more (a 85% lean patty has more fat than impossible burger).
