All a VPN does is encrypt the traffic between you and the server you VPN into. It will prevent your service provider from viewing that traffic. That is literally all it does.
OP mentions protection against a website grabbing his original IP address. A VPN is absolutely the easiest way to hide your IP from the outside world. Why so excited?

You connect to multiple VPN datacenters at once, and your connection to a particular website is seen to originate from those datacenters. It is the job of the VPN provider to forward the traffic along. That's the definition of a proxy.
